.i left an excess of a B somewhere in here... within the confines of a word giblet... i probably thought: bigger... bouncier... gibblet looked better... and so very far removed from goblet... i'm not going to look for it.

i haven't done much today -
and i don't suppose i will finish this day of
with some grand poo'em...
but one can almost be proud
to have perfected a chicken breast roulade...
the rest of the chicken missing
the butterfly? well... bound to a very
decent soup... clear and not atypical
western cream-soup...
but the roulade! the roulade!
no... you don't beat the butterfly *******
like you might turn to: "sadistically"
for a schnitzel...
you do beat the meat,
but you more or less... press down the mallet
onto the meat, until you reach
the right equilibrium of pressure and
there's that squish-sound / feel of the *******
expanding...

if it was a whole roast chicken:
of course i'd stuff the space between
the skin and the ******* with some thyme
infused butter... to capture the richness...
but this is a roulade...
the stuffing? goats cheese... toasted almonds...
fesh dates... thyme...
i might have just over-balanced
the equation with the dates...
but as i explained to the fussy-eater:
what are you implying that we do not
serve poultry with a sweet attache?
cranberry sauce and turkey?
and as i've learned...

it's best buying potatoes from a turkish
outlet by the 25kg bulk...
from a warehouse where the buyers
walk with bundles of money and do not
use debit card "finger" prints...
the free passing of money is still retained
in some tiers of society...
but the idea, regarding the potatoes is
to poach them from a bath of cold water...
once they start boiling leave them for
five minutes, then turn the heat off
and wait for the bubbling water to stop...
drain them... then leave them on
the already turned-off stove to get rid
of any excess water...
drizzle some chilly infused olive oil
onto the baking tray, place each potato individually...
then drizzle some olive oil onto them...
shove them in the oven when the roulade
is finished...
my first most pristine roulade...
of course you have to pan-fry it to get some
colour... the filling is kept intact given that:
goats' cheese is no mozarella...

it doesn't melt and subsequently ooze out...
and the whole lot should be be done within
the hour... the roulade can be pressured
to go for 25 minutes...
depending on the colour of the tatties...
i still had to take it out and "glitter" it with
a 1:1 ratio of honey and lemon juice...
the remains of this juice i designated on al dente
cooked greens... there was no need
for a dressing...
left-over red cabbage coleslaw...
that helps... sweet chilli sauce with some mayo
and crem fraiche...
it even looks the prettier picture:
leftover but it still works...
***** of a ******* butterfly *******!
of course it was going to spit oil back at me,
i was frying the skin... the fat from the skin
was melting the skin was getting crisp
and mingling with the olive oil fat...
also... it's a myth that the temp. should
read: 165°F... that's really just a circa...
mine read 156°F... and given the time i let
it rest...

oh right... this is not a food blog...
perhaps the moon is just too beautiful tonight
to have to attach words to it?
perhaps my love is better left alone and unused
and it doesn't demand sleeper idealism
for it to be celebrated?
it's cooking food... it's not a hip-replacement
surgery...
when cooking was married to chemistry:
i sometimes miss the laboratory
and the cooking up of esters...
my new found calling is in cooking...
and something i... wouldn't exactly want to earn
money for...

and what is surgery if not elevated butcher's ******>antics? oh no, it's needed...
but the meat is supposed to be raw
from beginning to end...
and if i was only given the chance to recycle
a recipe for a stake tartar...
or sushi... well... it wouldn't be much...
esp. when i come into my own
and cook an indian **** of spices...
but then again... the indians butcher their meat
in their curries...
i've come to some serious realisation...
the indians butcher the meat with their curry sauce...
it comes down to baking the meat...
in order for the meat to still retain its
original juices...
i quiet enjoy that little detail of cook...
in that: i don't remember the last time i was
in a restaurant...

i can't imagine eating while having to talk...
conversation over food is no better
than sitting in field of grazing cows
and their leech clouds of flies all bothersome...
with regards to the quality of the meat....
there is always some excess of meat from
the butterfly ******* before you start moulding
them into a shape that will satisfy it being
rolled...
it's a supreme joy working with a whole
chicken... i sometimes wish i was also the man
who could see the whole procedure of:
and be involved in the slaughterhouse...

oh god... the brute village beheading is
rather uncompromising... one chicken is caught
and beheaded on a stump of wood...
the head still moves with its last remaining
short-circuit tongue extending out of the beak
and the eyes roll... and then all the other chickens
congregate and perform a Kuru ritual of pecking
the blood... sipping it...
that's how killing a chicken in a village
looks like... i can't imagine an industrial scale
precision... but i would't mind...

every time i hear of veganism: the ethical argument
i start conjuring up an antithesis of
cannibalism... which is not exactly edgy given
my catholic background (i haven't been
confirmed, personal choice):
this is my body, this is my blood...
i hear a vegan talk i make a fetish of
imagining cannibalism...
believe me... these limbs look akward...
to begin with... where can you find a *******
drumstick of poultry on it?!
nowhere!

only a few days shy off today i made a most
delightful broth of chicken hearts...
i can't explain how the sight of washing...
oh... around 30 pultry hearts feels like...
given that they're hearts and not the entire chicken...
but as ever... the internal organs are a delight...
pork or poultry liver...
poultry hearts...
poultry stomachs...
cow intestines...

come to think of it... you never really cook meat...
you... curate it... it become a fine art specialist...
for those who turn to veganism or the vegetarian
"alternative": perhaps they never curated meat,
perhaps they simply butchered it?

always came out dry-*****?

after all, wasn't ol' Adoolph the one to say:

auschwitz'... that's the puberty of my distrust
for vegans... they were never able to
cook meat properly... they probably ate
a decent piece of it served in a restaurant...
but when it came to cooking it themselves...
they would have probably butchered
a pasta and never reached the quality: al dente...

and i'm worried that they can't cook
vegetables al dente either...
so it's back to the gulag of roots overcooked
and turned into mush...

oh i believe that meat is butchered...

can one have when presented with food?
i don't like restaurants simply because:

and shooting at birds is not my kind of thing...
so if i can't catch it and **** it...
i can at least: cook it...
i distrust what i eat that i haven't prepared
myself... notably the hygiene dilemma...

it really is on my head whether i'll catch
salmonella when i sometimes drink a coffee
with a guilty pleasure of mine:
whisked egg-yoke and sugar... on top of the coffee...
that's my problem...
but eating is never a synonym with conversation...
and it's never necessary to loiter and wait
for someone to shove pretenses above
the food in the first instance of: the waiting staff...

i blame the rise in veganism surrounding
the people who never allowed themselves to appreciate
the animal: in total...
there's no fun just sticking to ingesting muscle
protein... first you have to cook it properly...
this chicken roulade didn't have to reach
the internal temp. of 165°F - that's a circa proposition...
at 156°F and allowed to rest is just as good...
because it's an art-form to cook meat...
then again: what's cooking and what's about
to be curated?

the people who turn to veganism are also the people
who never bothered with gibblets...
the liver, the heart, the stomach,
in some cases the intestines...
hence my critique of Islams critique of ol' porky Bella...
this most unique animal...
which you can eat in total...

I have little to say in new environments.
I tend to act shy and forget how to form words.
So when I had to go to marching practice and was
surrounded by people I didn't know
I suffered.

Was it not obvious that I was flustered when I fell
five times in thirty minutes?
Maybe it wasn't obvious how I kept repeating the
same thing over and over again,
hoping people would stop staring.

But instead of caring you walked straight up to me
and made me look like a fool in front of
everyone.
"**** in, you're stomach is showing!" You exclaimed
before poking me with a drumstick and catching me off guard.
It hurt and my torso bent and all the upper classmen
laughed at me.

So thank you for embarrassing me, it will not be forgotten.
It won't be forgotten like the time you insulted me
in the seventh grade and I 'accepted' your apology.

"Wanna taste a Drumstick,"
My taste buds are shouting.

The flavors of those juicy flesh,
My tongue's missing.

I have known, and I have cared for, those who think
rebuilding a person is love
which is quite nice
in theory
but then, I became destroyed. I was a project,
a house of cards that had fallen
and frustratingly needed put back together, elevated
the way the moon gets lifted from grass
or a friendship necklace
lurches from my lover’s body. His collarbone peak
separating the relationship from the heart.
When someone told me
love can be piecing each other back together,
I just thought of how it could be
crumbling together, too —
mixed up, mixed blood, if he were to die, my
necklace would disintegrate with his
tongue. We would cremate sterling silver
and even then, he would not be destroyed. We are not
scientists, we are two people who kiss
together like how two
wooden-sticks’ll use the same drum to create music.
There may be splinters, may peel but
can still make sound. No one
takes a drumstick to the repair shop, they just
buy a new one —
I want that to be love. Stop trying to

the lather into the remnants of a strawberry
shortcake paper plate soak-through.
I tapped my Chucks on the pink,
checkered floor to the cymbals.
Heel toe, heel toe strut,
stopping every few measures
to re-tuck my herringbone-detail
tie beneath my collar. I heard
his trumpet wail, and mimicked
it on the rusted shower rod like a cheap
snare, deep drumstick strikes patched
with meat tape. I carefully ran the flexed
blade beneath my cheekbone
like a piano-park saunter, trying not to step
on the drummer’s heels ‘cause he hits
it just right. And the brass birds
are just right. The bench creaks, the cinder

but I look back and must confess.

We started playing, I start to sing,
my voice came out a hoarse croaking,
she threw the drumstick through a door,
we were laughing on the floor.

Hot and stuffy we sat in the dark,
waiting for our smallest part.
The guitars went badly out of tune,
a wolf howling up at the moon.

I regret not trying to play once more,
before your soul went up to war,
the time we spent in the music hut,
freed me from my deadly rut,

Do you remember the day you died?
we heard about it, we cried we cried,
a darkness fell forever more,
never lifted, filled with regret, angry at god, us, us, the darkness tore.

too tired for repercussions from prior trials by fire,
so they pile the pyre and sing for the choir
while the liars catch wildfire to a dire count of 4-5-1
by a child with a drumstick instead of a thumb in his mouth.
you can hear the percussion through his stomach for crying out loud.
are the parents proud of this juvenile behavior,
have they vowed to reconcile with its nature?
are they beguiled by how it reviles exile
but every now and then goes the extra mile?

The stout capsicums
Always in dieting and yoga

Red and pulpy tomatoes
Came running some toddlers
Of round and small green peas

A celebration was the wedding
Of happiness and togetherness
Sharing their blessings and love
With a sweet kiss and a tight hug

The infatuation begins, one thousand five hundred seventy three miles away from my folded futon mattress on an unfinished floor in a sideways run down house with a gravel driveway and a wonky mailbox, across from a little green-grassed pasture with yellow flowers and "dead end" street signs lining the ditches.

Captain Chicken would be afraid of his own shadow
He was just that hallow
It all started with Captain Chicken travelling the seven seas
He would be scare even with the breeze
But he was a Sailor at the time
But Captain Chicken could be a little sublime
It was a violet storm, and the waves were pouring into the ship
The ship began to do up and down dips and the sides in tip
The crew began to panic
Of course Captain Chicken was simply frantic
Oh the Mighty Seas that raw
A chicken Captain in watching the Sea Waves he saw
The so called Captain Chicken could very well had been a tuna dish below
Yet, the crew managed to pull through the ordeal
But was Captain Chicken for real?
However, but what I didn’t tell you was Captain Chicken didn’t know how to swim
How fitting for a ship that sails on water
But what would happen if the ship should certainly sink?
This is where Captain Chicken would have to think
But the closest water to Captain Chicken would be a *** of Boiling Water
But not necessarily in that order
You might be thinking, it sounds more like a plot
But this is reality having a not
Captain Chicken ranking from Sailor to Captain
That means maneuvering the ship through unforgotten waves and obstacles
But it’s water not being Captain Chicken’s refuge
He’s lucky he has two legs to stand on
But again with another question of how long?
But what really comes to mind is at least Captain Chicken’s legs didn’t become a drumstick
No courage would be what would stick
Captain Chicken with a ship name I would call “Chicken of the Sea”
That describes Captain Chicken in every way
In fact, the name Captain Chicken is what will stay
But it all started on this day
No one will ever forget Captain Chicken
But the end result is, no matter what, Captain Chicken will be controlled by the waves and the waves message, “Captain Chicken, you will have to behave”
We control the sea waves.

When my Grandfather passed away in April,
I was down there with him,
Making dinner for the two of us,
We'd watch jeopardy and the news,
While eating a Drumstick ice cream.
Whilst driving him to the doctors or shuffleboard league,
He'd tell me tales of when he was in the military,
And all the various hijinks him and his lifelong friend P.E. would get into.
He also had some last minute advice when he elected to be moved into hospice.

It was just a little over two years since my Grandmother passed,
When Grandpa decided to go to the next great adventure

He had some words that he was very sure couldn't wait.
I talked with him for hours that night,
Until he finally nodded off.
My sister and mother arrived the next morning,
And I left on a flight back to Ohio by noon.
We talked that morning,
For what he knew would be the last time.
He thought it would be best for me to head back up to Ohio.
He didn't want me to see him get any weaker.
He told me to live my life with as few regrets as possible, and that he loved me.

That was always a big thing for him.
He always said he couldn't ever remember his father ever telling him he loved him,
And that he tried to tell his kids and grandkids how much he loved them.
He would always be aware of what sports season was currently happening for his grandchildren,
And what their placing was.

He would get into these fits of laughter when he was trying to explain to something finny,
Where he couldn't even get any words out,
He'd be giggling too hard.

He was one of those people that when he was born,
God went and broke the mould.

Of the things I inherited, one of them was a typewriter.
Oddly enough,
It was about as technically advanced as he got,
Besides using the computer to play solitaire.
I remember when we'd go and visit in the summers,
On weeklong trips,
And I'd spend as much time as I could on that typewriter.
I'd start out with elaborate visions of a great novel or screenplay,
But by week's end they'd be short stories that were of ok quality for whatever age I'd be at the time.
What I never thought about is what happened to them when my family would  go back to Ohio,
I never thought my Grandpa would ever read them,
Let alone keep them.
So imagine my surprise when I come across a box labeled stories.

and if i could... substitute... my dosage of "terrible liar"

give my mind and body up to the wine and coca-,

but who's up for...
       recycling wine bottles...
and standing in queues... we're talking...
     8 x 2 =...             16 units...
your typical bottle of wine
is 9 units... circa...
      roughly 2 bottles of wine... per evening sitting...

- clearly someone was busy...
reinventing drinking and...
a "time-machine":
more like... the cameo cinema of memory...

or... candyfloss...
             i never liked drinking with
people...
too much conversation and...
"idiocy" of stressing the moment...
or whatever moment...
evens out... smiling... having a head filled with
a hebrew definite article that's
also... one of the H's
in the tetragrammaton:
i call it... the vowel-catcher...

but if one is the vowel catcher
equivalent to: ah... (a sigh)
   and eh?! (the question being
reiterated with an already presumed faulty reply)...

the laughter: ha ha ha ha...
  beside the point...
       who the hell desires to drink
wine for the taste: a connoisseur...
i'm pretty much sure that i've subsribed to: to drink
a wine... one mustn't "deceive"
oneself with: a spartan detail of a body...
or a spartan body of detail
              (coin flip on in)...
"free will": but still a reminder
that there only consists an argument
of choice for either A or B... etc.
"free will" and the constraints
of choice... give than... eventually:
only two revolve around pushing a vector forward...

or the "thinking thing": i think to **** the sponge...
the brain that i trust to be guided by
its unconscious: nerve central...
and also... a proto-life-form...
i need it to be: an... "empty thing"
    (res cogitans / res vanus respective)...

i drink... and... wait... for pinching
this sponge-life-esque-and-form...
******* flushes of "in vino veritas":
good that the ancient romans
didn't taste *****...
      talk about giggles when being
trapped to crucifix stilts...

  still... the baptism of poland: 966...
the baptism of lithuania: circa 1400...
the emergence of islam: circa 960...
complicated: well sure...
it didn't spread like "wildfire"...
                     only in place where:
prior to: rome left a footnote and mark...
the germans converted...
with the promise of being the revival...
or whatever...
            
                   that's the difference
between a confederation... and a simply: federation...
                    it's a work of ingenuity
that by export: there's the united...
    which isn't exactly "united" at all...
i digress... the wine the candyfloss...
and... the vanguard...
                nibbling on history while
journalism is asleep...
and this is very bad nibbling...
this is how you don't eat a drumstick
of chicken... unless...
you are fond of your dog...
or you entertain the idea of vultures...

                and something of a poetry in between...

how was the "united" implied...
                         the circuit... and d.c. stresses
that there be no confederacy...
   like... it's a nice chant...

       finally h'america opened up and
we stopped hearing the music and stopped
watching the movies...
and no one really cared that much

truth be told: or better still! no truth!

to drink: is to giggle: and keep the truth
as a postcard: pushing it into a mailbox...
without a stamp or somehow underpaying a
fraction of the stamp:
having the receiving end of the "matter"
to cough up the... "details"...

           perhaps this part of history is about...
being resolved to having a period
of: history as nostalgia...
perhaps it's not exactly: a repeat mute button
of groundhog day...

perhaps this part of history is:
nostalgia as history...
      outside of a refernce pointer:
          joan jett or susanna hoffs...
                      all that and the posit of:
well... d'ugh... no **** sherlock!

exhausted or there's still that flicking
of a flame a lacklustre fling for a / with a past...
               as ever: a portion wakes up: while the rest
are gladly falling asleep in the forever dreamworld...

pour the wine! choke on the bloke jokes!
pour the wine! we can fathom the idealists...
we can fathom the romantics...
but we'll sooner come to grips with:
gimp masks and snares of the idealists...

that ol' case of love: in theory...
never muddled: never muddied...
never to be exhausted... by the already available:
grey: elder world of people making
happiness from an unobstructed commute...
nor that: emblem: of tapping a stand-still
"perhaps" dance of a bus arriving late...
minor conflicts: that most certainly
become major elevations to
transcend the day...

                     a questionable narrative...
of all thought: no pen put to paper...
a "questionable" and "narrative"...
  "thinking" and... all of that baggage: shucks!
into the aether it goes!

      as ever: a welcome goodnight...
with christopher young's: hellraiser II soundtrack...
and... for all the ***** that... a rod stewart...
he's still mostly adamant on...
his train-set...                with that sort of reality...
i can, with ease... check in and out of...
for: however many years rod still has in 'im'
consecrations and bull-sacrifices...
and a yawn of moloch... a good night's bargain
of sleep.
