Ingredients for 6-8 people
• 4 egg whites
• 2 egg yolks
• 100 g (1/2 cup) of sugar or 5 tablespoons of fruit sugar (alter to your own preference)
• 500 g (2 1/2 cups) of mascarpone cheese
• 4 small coffee cups of espresso coffee
• marsala wine (or brandy or cognac)
• 400 g of savoiardi or lady fingers (sponge cake fingers)
• dark chocolate powder
Preparation
1. Make espresso coffee, sweeten, and add the marsala wine (or cognac) to it. Let it cool a bit.
2. Separate the egg yolks and the whites of two eggs in two bowls.
3. Beat sugar into the egg yolks.
4. Beat the mascarpone into the sweetened yolks.
5. Add two more egg whites to the other two and whisk until they form stiff peaks.
6. Fold gently egg whites into mascarpone mixture.
7. Quickly dip both sides of the ladyfingers in the espresso mixture.
8. Layer soaked ladyfingers and mascarpone in a large bowl or pan (start with fingers, finish with mascarpone).
9. Sprinkle dark chocolate powder on top.
10. Refrigerate for one hour.

We know you, and your little dark colors too. A picture book in your purse penned in mustaches on the full faces of your fare. We call you from bed, 8 o' clock in the morning, dog-light you slow wander the Peruvian darkness making jellyfish tentacles with your hands while you feel your way through Salem. We're colder than night and we wake thrice the bits of your day gig. You collapse in a green field of dandelion where thrushes drown you in Brown. We gorge ourselves on mango slivers, pineapple yolks, a half of grapefruit. We know you are close to your end.

On the tops of the cities you call to your lycan friends, the half-sick and muted bray allures them to you, from Bratislava and Mimon, the thoroughfare through the suq. We wait. The foregone untold, the beep beep jug jug swoop sound of the nightingale, in all her dun glory, we wait. Then, as if descending through the moor-lounging silver smoke, the cool stickiness to your fingertips; the fog.

We are there when the blue-less and smoky screen surrounds you, when you shank the auburn Scot hair of the sly fox that stalks, say, a cigarette from your lips. When you take the corners swiftly, gadding the streets. The prize king of vulpicide. You rub its matte fur against your bristly gray beard. And while you lay in your lumps of twelve carat flesh you bleat and you nag. One day you will never come home.

4 harmful foods that benefit us too
Maintaining a healthy diet isn't easy as one has to be careful of every morsel of food or sip of drink that they consume. So when research reveals a positive angle to some harmful dietary habits, what should one do?

A recent study in London showed that those who increased their coffee intake by more than a cup a day were less prone to have Type 2 Diabetes. On the other hand, caffeine is known to increase blood pressure and isn't good for the body in the long run. Here is a list of food items that are considered harmful, but benefit us in some ways as well...

WHITE BREAD

Why it's bad: For a while now, white bread has been pushed to the back seat due to the growing notion that it leads to increased blood sugar and can ultimately cause obesity. The grains are processed in such a way that it strips the bread off all nutrients. Scientists at Tufts University in Boston also found that eating white bread increases your waistline, when compared to brown bread. Fitness expert Wanitha Ashok adds, "Eating white bread makes you hungry in an hour or so. When it comes to nutrition, it doesn't get the top slot."

Why it's good: Eating white bread isn't necessarily a bad thing as long as you eat the enriched variety that contains nutrients, especially those that are topped with oats and nuts. Research done by the Irish University Nutrition Alliance showed that white bread contributed as much iron and fibre to an Irish diet as meat or fish. Nutritionist Ryan Fernando says, "The only time we recommend white bread to anyone is after a good workout. Sports athletes, especially, eat white bread as it helps replenish glucose faster and it's beneficial for the muscles."

FROZEN VEGETABLES

Why they're bad: It is believed that fresh vegetables are better than frozen ones because of all the processing that takes place to freeze them and keep them fresh. A study done by the Department of Nutrition and Dietetics in Turkey concluded that thawing frozen veggies before cooking them led to the loss of Vitamin C. "This is just convenience food. Anything you store for a long time begins to lose nutritional value. Also, in India, there are so many electricity fluctuations, so it's better to keep fresh vegetables," says Wanitha Ashok.

Why they're good: Lately, a lot of reports say that frozen veggies are better than the fresh variety because they are picked when they are most ripe and frozen so none of the vitamins are lost.Also,a study done at the University of Chester shows that there was a decline in the nutritional value of fresh veggies when refrigerated com - pared to frozen ones.

EGG YOLK

Why it's bad: It's known to increase cholesterol, which is why people with heart conditions avoid egg yolk. It also contains a lot of fat,which isn't good for people who gain weight easily. A Canadian study says that regularly consuming egg yolks can lead to plaque build-up in blood vessels. Why it's good: "Egg yolk has essential nutrients and vitamins, especially when compared to egg whites, which don't have as much. One or two eggs yolk a day are recommended for children, whereas adults should have one to get their intake of necessary nutrients," says Ryan Fernando. The cholesterol in the yolk is needed for elders and children who have adrenal issues.

CHOCOLATE

Why it's bad: Not only does consumption of chocolate gradually increase one's weight,but people tend to cut down on it because of its caffeine and fat content. "Children get addicted to chocolate when their consumption is not moderated. It's harmful for diabetic people and the sweeteners in it are bad for the teeth," says Nainatara S, a consultant nutritionist. The high oxalates in chocolate are known to cause kidney stones. A study by the American Society of Clinical Nutrition showed that the higher the consumption of chocolate by elders, the more likely they were to be affected by bone disease.

Why it's good: Nutritionist Murali Subramanian says one benefit of eating chocolate is its antioxidant content. A study in the University of Illinois showed that consuming dark chocolate helped lower cholesterol and blood pressure. There is no smell in all the world,
None in the North or South,
None in the East or West,
None in the lowest places,
None on the highest peaks,
Like that smell filling the air,
Filling the house,
Filling my senses,
That smell of spaghetti frying,
Frying in the morning light,
The smell so different from when it was first cooked,
Moving the senses,
Moving the mind,
Anticipation in scent,
The sauce sizzling,
Changing,
Changing in the frying pan,
As the noodles turn crisper,
Crisper,
Crisp,
With that crispness like no other,
The noodles,
No longer white,
Made yellow,
Yellow from the sauce,
Fried onto them,
One with them,
Flavours seeping in,
And the sauce,
Orange now,
Red orange but clearly orange,
No longer the bright red it was when it entered the pan,
And as the sauce and noodles change,
Reach that perfect point,
The smell just right,
The colour just right,
The texture just right,
The sizzling reaching the perfect crescendo,
Then, and only then,
The spaghetti no longer stirring,
Evened out,
Temperature lowered,
And carefully,
Slowly,
To keep them on the top,
The eggs break,
White running among the noodles,
Filling the gaps,
Turning from clear to white as they hit the hot pan,
Yolks floating on top where they should be,
The perfect drop,
And the odours as the white changes,
Filling the air with new scents,
Mingling with the ones already present,
And then the salt, disappearing on the surface,
The black pepper,
Black flects,
Scattered evenly,
Perfectly,
The smell of pepper joining the egg and spaghetti,
And a splash of Tobacco Sauce across the whole,
That hot smell,
That bright red colour,
And the silver lid slips on,
Over the top,
Hiding,
Protecting,
Cooking the whole,
Until it is done,
And the lid set aside,
The whole onto a plate,
Perfect to the senses,
The smell,
The colours,
The texture,
Perfect,
And the first bight,
Heavenly,
Like nothing else on earth,
Almost sweet,
But still savoury,
Strange to those knowing bowled pasta,
Strange to those knowing simmered sauce,
Strange to those knowing fried eggs,
But the tastes,
Perfect,
Blended,
Strange but familiar,
Many memories,
Images,
Experiences,
All coming together like the different parts of the fried spaghetti,
And the fork through the yoke,
As it runs down,
Bright yellow into orange and red and black and white,
Perfect,
Amazing,
Done.

These saddest fractions,

A Freshened Palate, Perspective, and Purpose

Ingredients:

1 potato, 1 egg, half an onion, 1 clove of garlic
salt and pepper to taste
Light frying oil, 2 slices of bacon,
A fistful of poor self image
I mean, spinach
Balsamic vinegar, applesauce,
A dash of self-hate, and left over unwanted thoughts
Note: for a healthier alternative, forget the self-hate
Also note: Can’t remove unwanted thoughts


Step-by-step instructions:
1. Trim potato of any bad areas
    No matter how badly you’d want to trim
    Yourself

    Wash and scrub away any dirt or sand
2. Grate potato,
    Not knuckles
    Squeeze gratings with an old
    T-shirt or throwaway towel
    You could use the shirt you’re wearing
    But you’d end up wearing your stains
    Which, honestly,
    You do anyway

3. Grate onion, cry
4. Finely chop garlic
    Don’t think about the bad breath
5. Put potato, onion, garlic, and 1 egg (without shell)
    Into the bowl and
    Mix
    But not like mixing drinks with anxiety med
    And bad coping mechanisms.

6. Heat oil until shimmery
    Fry potato mixture to make 2 or 3
    Golden brown, delicious latkes
7. Fry bacon while latkes are in pan
    Fry two slices so the bacon doesn’t
    Have to be
    Alone or
    Isolated

    Set aside on paper towel to soak up the grease
8. Boil water to poach eggs.
    Once boiling,
    Swirl water into a whirlpool
    Exactly like the thoughts scalding
    The insides of my skull
    For example:
    Do you know what it’s like to
    Hate yourself? To not stop the
    Unbelief that you are any
    Good at all?
    Understanding that you’re
    Unemployed
    Unskilled
    Unwanted

Gently crack two eggs into whirlpool
    Understanding that you can’t simply
    “Get over this”
    Like standing under burdens
    And whiskey bourbon hits
    Expectations - faraway dreams
    Only furthering it
    Like you’ll never be able to accomplish them
    You’ll surmount them but run
    Out of oxygen because
    You’re not
    Supposed to be there
    In the first place

(don’t worry, the whirlpool will prevent eggs from
breaking)

TURN OFF THE HEAT AND COVER
    Set timer for exactly 5 minutes.
    Do not
    Lift the cover until time is

    After 5 minutes, scoop eggs out with slotted spoon and set on paper towel to dry.
    Let eggs
    *Rest.

    Be careful,
    The yolks
    Are very fragile at this point.

Assemble the dish
Spread applesauce on potato latkes. Be careful
Not to spread so thin.
Don’t be stingy,
take what You need.
Put bacon on top, stack poached eggs on top of the bacon.
Garnish plate with spinach, sprinkle with balsamic vinegar.
Each thing has its place, even if it seems too complex or complicated.

Flavor Profile;
Latkes are light and
Fluffy and crispy.
Onions, garlic give a basic, yet
Flavorful foundation.
The egg yolks spill a very rich, deep syrupiness that is brought out by the salty, fatty bacon.
The applesauce is special because the sweetness and **** contrasts with the smooth richness of egg, potato and bacon.

And just like life, balances the heavy with the light

       Learning things and saying things
       Being there with being here

I don’t know that I trust myself
To keep my brains like a raw egg
When the time comes (when I’m supposed to know what to do)
And not to crack my skull,
See my brains drip into the bowl,
Mix them up for a broken yolk,
And then pour them into the pan
So they can scram(ble.)

Sometimes I wonder
If I’ll have to salt them
or add any pepper
or just dig in.

Sometimes I hunger
To know everything
Sometimes I feel so engorged
I’d rather know nothing.

The worst part is not knowing
That the worst part is knowing.

I want to hate my own guts
But that’s--that's utterly nuts,
For it’s never the guts
Should be disdained—
It’s the yolk in my egg, or
The stuff in my brains in my head.
