It was in the end of September,
The kashmir trip i still remember,
The thought of going to the heaven on earth made me feel so excited,
I was happy and delighted,
Our eyes filled with enthusiasm and hope,
And to kashmir we wanted to lope,
Just the twelve of us,
There wouldn't be any ruckus or fuss,
We were accompanied by ma'am Handa and Mr. Pandey,
We enjoyed everything from gondola rides to our house boat stay,
We went to places like Sonamarg and Pahalgam,
We'd get tired reach the hotel and apply Jhandu balm,
We enjoyed all our horse rides,
We were accompanied by well-versed guides,
We always managed to take out time for shopping,
From shop to shop we went hopping,
Kashmiri kawah and authentic Kashmiri food for almost every meal,
Would make the tiredness for long distance walking heal,
A Kashmiri wedding is also what we attended,
For back and forth rides on shikara we depended,
Oh! But to sum up I have to say,
In kashmir we loved it each and everyday.

between the thick soupy crisp air of soldiers
water lilies, Kashmiri bread
and the Muslim prayers
that penetrate the hardness of war
chanting Allah Bismallah
Floating Islam
Holy words drenching the air
Drenching the green cloth of Hindu soldiers
Sliding down the cool metal of a rifle
9 years of war
1,000 houseboats lie empty
in the Himalayan fog
Intricately carved furniture
Thick with dust
and the powder of blood and bullets

Himalayan silhouette etched black
against the song of lotus gatherers
Foggy voices like cloud of moon

Kashmir is not just beautiful
It was also free of violence,
Not too far back in history,
That did occur just 7 to 8 centuries ago.

Then they poured out of Central Asia,
Hordes getting bigger with each wave,
Eliminate they did the original people.

In 1320, it was Zulju raiding Kashmir,
Then Rinchana, a Tibetan Büđđhïst refugee, he took over.

Rinchana had Shah Mir as his Minister,
Shah Mir persuaded Rinchana to Islam.

After Rinchana, his son was set to be the ruler,
However, Shah Mir killed this lawful successor.

In 1339, Shah Mir became the first Muslim ruler of Kashmiri lands,
Initially, they did not dare harm the original Hïnđū inhabitants.
Then it was just Muslim kings for few centuries and slowly the Hïnđū heaven slipped into Muslim hands.

Now we know what is the ground reality,
The demography became Islamized over centuries,
All arts and crafts stand dwarfed by violence,
What they aim is an Islamic State, an Islamic Earth.
Islamization in Kashmir took place during 13th to 15th century and led to the eventual decline of the Kashmir Shaivism in Kashmir.

well there's that my sudden compromise:
i always loved organic chemistry,
i was really good at it,
but organic chemistry seemed futile in theory
with too much emphasis on tic-tac-toe
of those migrating diagrams,
trying to enforce the atomic visible
represented by C (carbon) attached to H (hydrogen)
with a tail of a carboxylic categorisation
O= (doubly bonded oxygen) and OH (the alcohol
bit), ****** futile... i just loved cooking
anaemic potions of clear like water,
sometimes scented, sometimes like sulphuric chick farts,
it was basically cooking, i didn't like physical
or inorganic chemistry, actually, university
almost felt like a museum, we weren't students
we were tourists, we were showed the basics,
the impracticalities of later application,
i was never asked to make a bottle of shampoo,
or a toothpaste, or a perfume, i was asked to
recreate theories and cul de sacs of application,
yet actual chemistry is your hoarding of chemical
products in the bathroom: starting with bleach...
never learned how to make bleach...
shame really... the workforce of chemists isn't
given a fair start, no mechanic implication:
ok ok, i'm not into having an existential crisis
in my early twenties, can you just make me robotic
so i can provide the instruments of dentistry
and hairdressing? no? well, here comes an existential
crisis aged 21...
but organic chemistry is still the bomb...
like that onion i smashed after it was dipped
in liquid nitrogen... felt like moses with the two
tablets thrown onto the ground... or a pirate's X...

so every time i cook i think of an organic chemistry
experiment, although i've learned that cooking
is a more colourful chemistry, and poly-scented too,
today i made shanghai style braised pork belly
(CHONG SHAO ROU),
sugar, light and dark soya sauce, kashmiri chilli powder,
ginger-garlic paste (plenty of it), spring onions,
oil, balsamic vinegar (good if you don't have shaoxing
rice wine, same ****, different cover)...
cup or two of water... and then watching the water
evaporate and all the active ingredients starting to
cling to the pork belly slices, making it look
as if coated in glistening flour... nunchuks finger licking
smooth... yeah, i eat chinese cuisine using
nunchuks rather than chop sticks...
even comrade mao tse-tung would approve,
after al chong shao rou was his favourite dish.
in addition: **** remembering poems and scaring
children... remember recipes; job done.

Did you know the East Indian Bottle Masala includes as many as 27 spices, or that an oil-free pickle served at their weddings is actually known as Wedding Pickle?

These and many such authentic East Indian masalas and pickles are available at East Indian Cozinha (Portuguese for kitchen), a food store started by Christina Kinny at Kolovery Village in Kalina, Santacruz. "I started East Indian Cozinha with an attempt to preserve and highlight our cuisine and culture," says the 24-year old, who has studied Masters in Social Work and currently, works with an enterprise that helps tribal farmers.

What’s in store?

Going back 500 years, the East Indian cuisine enjoys influences from Portuguese, British and Maharashtrian fare. The staples include rice, coconut, tamarind, fish and meats, with spices forming an integral part of the cuisine. For instance, Prawn Atola is a dry dish comprising prawns coated only with Vindaloo Masala featuring Kashmiri chilli, cumin and turmeric. "Most people from our community were farmers and would be out on field all day. So, the masalas and lemon would help preserve their food for a longer time," reasons Kinny.

At present, the store stocks six varieties of masala in 100g bottles (R150 onwards). These include Khuddi or Bottle Masala, Chinchoni (fish) Masala, Vindaloo Masala, Roast Rub, Kujit Masala and Tem Che Rose. She also offers Wedding Pickle, an oil-free variety prepared with raw papaya, carrots and dry dates. "All the recipes have been passed on from generations and are homemade," she informs.

However, making the masalas is no cakewalk. "It takes three days to dry spices under the sun. Then, we hand pound them and pack them tightly in bottles with wider openings," says Kinny. She recalls that in her grandmother’s time, the masalas were tightly stuffed in beer bottles. The bottles were darker, and hence, helped preserve the masala for at least a year, at room temperature.

Lugra love

East Indian Cozinha also stocks traditional 10-yard saris known as lugras. These are hand embroidered by Kinny’s mother, Carol. Previously made only from cotton with authentic gold borders, now, lugras are embroidered with sequins and threads. "She has been in the garment industry for the last 30 years. She also makes traditional accessories like kapotas (earrings), karis (hair pins), anklets, etc," informs Kinny.

As I got up on a chilly morning,
Scraping my eyes – hankering to sleep more,
I looked through the window-pane,
To find rain drops fall again !!

Some drops went tumbling on the ground,
And making puddles all around !!
The rain was falling down in sheets,
Spellbound and hypnotized, my heart skipped beats !!

Wind was misted up with cold air,
And a hot cup of sheer chai (kashmiri tea) was waiting near !!
Before I could take in a little sip,
And touch the cup to my bottom lip…
Shucks ~ The honking vehicle shattered it all,
To find that there was no rainfall !!

(And I woke up to the reality – sunny day outside, finding myself sweating in Mysore NOT treating myself to my favorite Kashmiri Tea !!!)

Brian Molko was already doing the current wannabe-trend of trans-sexuality long before trans-sexuality was a common "thing"... tracing back some ulterior taboo settings... today on my way to work i spotted my first trans-******: wow! obviously he had manly hands... large... he was tall... he had large feet... but slender legs... and a face, with all that necessary make-up of eyeliner... hair? not very long... shoulder length... yes... a deep voice... but then again my godmother has a husky voice from all the smoking and drinking... but i fancied him... the dynamic on the tube was magnifying... three women sat beside him while he was talking to his geeky (maybe, probably) boyfriend, a plump chap with eyeglasses... i couldn't stop thinking: ah... the solidarity of men... when in shortage of supply of women, men will find alternative avenues to compensate for women, men will find women in men... the idea that i might be a transphobe never occurred to me: but it did occur to me that women: for all their supposed glorification of acceptance would never allow men to be attracted to men who are: beyond merely the thespian gay-lord, *******... ally... this... "freak"... i fancied this man... i could omit all the stressed "imperfections"... but such a feminine-feline face... it really suited him... i wanted to kiss him... i was thinking... i'll tend to the "oysters" and all the tender bits and bites of being with him... andd do the butcher's work with a *******... problem solved... this skin-head middle-aged (i'm coming to middle age, or life expectancy, not the lottery of mortality, mind you) sat next to me and was sort of nudging me with a shadow missing in the full-glare of the lights of the tube... you fancy him? insinuations via body-language: yeah... i do... is it wrong? nope! check the women sitting next to him... do you fancy them? nope... me too... of the three or four women sitting next to this trans-****** specimen... none had a lovelier face... mutations just... "happen"... the eureka-oops moments... i could seriously forget about the shared dimensions of large hands twice as big as that of a geisha, same with the feet... i could forget the baritone voice... i really fancied this boy... in a way that gay-lords just make it difficult having mingled with actors too much and not retaining an aura of: suspense and: something in me is frigid, alien... i shouldn't but... hell... i really should! i will! benevolent London that is... he was prettier than all the women i saw that day... like my grandfather once said: there are no ugly women... there are only abandoned... if not abandoned then neglected women... to think that women could ever be neglected: says as much about neglected men... men will find alternative avenues to women when the women self-exfoliate in their "privilege" of: first-come-first-served-and-thus-the-only-served menu... **** that! but what was special about this trans-****** specimen? it reminded me of the time i fancied Brian Molko, still do... in a non-gay sort of way... in a Plato the Plumber there's a blocked toilet of reincarnation afloat... it was actually, sort-of, actually-sort-of-funny watching the women on the same carriage trying to read my reaction... for once a man was more attractive than a woman to me! wow! being accused of trans-phobia... in London? well... only if you can't pull it off! it's like saying: coulrophobia! fear of clowns! with the clowns being without make-up? conflating the Apex Twin gargoyle from Window-Licker?! yeah... scary ****! the grin that's the length of the equator... i couldn't be attracted to a standard homosexual... Thespian leeching or intellectually pleasing akin to a Douglas Murray... or body-building blah blah... but this trans-****** specimen? that's an affront to a woman... all women... a man can have a prettier face to a woman's if... a man deems the exampled woman to be nothing more than akin to a lineage of... never arrived at cosmopolitanism... beetroot countryside proud... all red and irritated... i fancied this one... i was one step away from askig him: can i have your number? again, to reiterate: i didn't mind the deep voice... i didn't mind the size of hands that could match mine or the size of feet that could match mine... i was... infatuated with the magic dust of PIXIES! maybe that's what i learned from going to the brothel... but if you're going to play the trans-****** game... can you please avoid the mishandling of the Hippocratic oath... so little is actually necessary to accomplish a ****-heterosexual confusion-attraction that leaves women feeling inadequate: you, wouldn't even want to begin to believe! i'm now currently thinking of that film: the Odd Couple... Walter Matthau as Oscar Madison and Jack Lemmon as Felix Unger... Felix being the male-feminine counterpart of the feminine-man slob child pampered to: or however this quadratic works... i wouldn't be doing the cleaning and the cooking out of a feminine dignity to avoid doing the hard work of society's demands... no... i'd be perfecting my cooking to match up to the sort of food available upon heading out to a restaurant, i.e. not eating out... i've seen some car-crashes of trans-****** attempts... but this one stuck out for me because i started to think along the lines of: who needs women if men can appear prettier than women?! i'll just close my eyes when hand meets hand... it's a sickly sweet sensation but i could stomach it: if the conversation was kept to a satisfying lubrication: and it wouldn't be even remotely associated to the feminist-gay "commonwealth"... alliance... i don't need homosexuals to tell me XY&Z... i'm actually grooving this trans-****** trend: if spotting the exacting specimen to curtail all the wannabes... if there's an authentic Brian Molko specimen walking around... wow! reimagining being *** starved on the Western Front... a few guys with more artistic inclinations... rather than the rough sea-faring roughage of **** on the spot job done become involved... prettier faces than those of women... i could: no! i would succumb! it's just the terror in the eyes and on the faces of women... hey presto! a stick has two ends! freeze eggs... follow a career... demand a car a mortgage blah blah... my my... what a curiosity this trans-****** worked up to a perfection specimen of disphoria awoke in me... good enough cushioning blanket of sleeping with enough prostitutes... now i really want to sleep with a man... which is not gay... i'm bored of prostitutes... they're like any other woman: you pay them... yet they still complain as if you haven't paid them when not getting a hard-on because of (x) tiredness, (**) distraction, (***) life... per se... whatever... but those female faces... i pretended to be snoozing... they knew i knew... i kept an itch of a blink at this specimen... woman: ANGRY... no... actually... not angry... woman... what the **** is going on? of the times i went to a gay club and didn't pick up a Francis Bacon i wondered: did i drink enough? homosexual lust and all that same-for-same feminine-pro erotica of the jealous stone-rub-stone-offensive... the trans-****** "confusion" is a bright light... if done properly... done... naturally... i'm mesmerised... without... obviously... without... people succumbing to the breaking of the Hippocratic-oath... obviously... i despise the gay-pride movement... at least the authentic trans-sexuality movement is subtle... it's philosophically laden with a curiosity of more lips and less **** stressing fist-*******... this morphing of the pareidolia toward: seeing a female in a man's face... or seeing a man in a woman's face... hardly gender dysphoria... *****-utopia and... just as children look alike, regardless of ***... so do old people... also regardless of ***... but to achieve a heterosexual attraction in the realm of trans-genderism? it can't be forced... it has to happen ha-ha-naturally! i'm laughing at myself... only briefly... i'm more inclined to see the female in a man without seeing the homosexual... because homosexuality is like that quote from... no... not Human Traffic... about being gay and eating *****... how... eating ***** is not for real men... while ******* **** is all All Spice Alles Mensch... whatever... the gays are too proud might as well look out for the shy, proper, proper shy... trans-sexuals without any anti-Hippocratic-Oath mishandling(s)... the women become jittery thus...

    it's a chili con carne...
and i'm looking at it, thinking:
   needs some garnish...
         **** it... cut up a few mint leaves
and dropped a dollop of yogurt
   into the dish...
       what?!
                   what do you imply with
serving a dish, where fresh mint is a garnish?
does the dish sound like any european
might cook, call it a stew and then sprinkle
some parsley onto it?
or does this plate of food, look like something
indian, where you garnish a dish of curry
with some fresh coriander?

     you garnish your grub with mint!
the "apéritif"? hence the inverted commas...
       as in... it's not really a drink...

                 brie cheese...
            which sounds a lot nicer than having
to brush your teeth... as if expecting to snog someone

after you drink, enough as i have, you get the strangest
recipes enter your mind...
               and you're not as lazy a marijuana smoker
either... you really start imagining things,
that aren't, or shouldn't be there, but later materialise,
and are actually there.
                  like tonight,
                  **** me... getting drunk can really give
you the munchies...
                i was like: it can't be as simple as crisps
from a packet... it can't be ready made, there,
at an arm's reach... so it began:
                                              bacon,
     ­             cherry tomatoes...
                           garlic paste...
                 crème fraîche!  
                       parsley to garnish!
                             pickled chilies!
            turmeric!
                     kashmiri chili powder!
            processed cheese! (laughing cow type)...
           i swear i missed something...
   oh yeah...  brassica juncea - or mustard greens,
   something a bit like lettuce...
     but if packaged, also includes red cabbage snippets...
plus arugula (eruca sativa), also a plant / rocket...
         and the carbohydrate canvas to serve it on?
                                                         a tortilla!
i swear, i should either stop drinking,
or stop drinking up recipes, when drunk...
  either that, or what i'm tasting, when drunk,
tastes really good, or that... well... if someone sober
would dare to eat what i conjure up drunk, would simply puke...
don't know, i conjure this recipe out of my ***
and it stays down... it's not like i'm frying a dog's ****
all of a sudden...
           if it stays down, and you get to digest it?
it can only be as bad as it sounds, with you not having
****** around with the stated ingredients, to whatever palette
of proportion that your palette's suited to entertain.
    don't know, i swear no marijuana smoker would
go as far as to invent something like this...
            you drink... you do get hungry...

i get right into cooking something up,
      primarily because when doing chemistry
at university, the most enjoyable chapter was organic chemistry...
and that was like cooking...

I was sitting at the Costa Café located in Indiranagar 12th Main road. To my right was the lane, sporadically disturbed by the wagons of sophisticated residents in the area. A Hollywood music puffed to the left of my ambience that comprised the café au lait hued interior, perfectly contrasted by the white Royal Genware Porcelain cutleries. It was a Sunday afternoon. The glass walls of the café were stained by the transparent drizzles of rain. I noticed my faded reflection on the glass wall. The eyes in the reflection held no sparkle. It was a pale face of a 32 year old adult, who has surrendered himself to Norns. Beards on the face was a sign of mental otiose. A good designation flavored with a terrific Pay Scale over the norms has filled the life with luxury. What more I need! I blinked. Tears occupied my vision to lubricate my eyes dried out of staring for long….
She entered into the Café with meek steps. She was wearing a bottle-green colored Patiala suit. Her head and upper body was veiled under a red Kashmiri stole. The veil was perhaps put on as a shelter against the drizzle. She seated opposite my position, three tables to my left. She slung her hand bag away on the opposite chair, removed the veil and threw it on the bag.

I skipped a heartbeat. I saw her after 11 cruel years. She looked fairer and chubbier. Her hair had grown longer; she managed to collect them into a neat plait, falling along her right shoulder touching her lap as she sat on the chair. A waiter came at her service. She bothered not to look at the menu and ordered a large Latte with a quick rise and drop of her eyes at the waiter. A streak of blue mascara made her eyes more stunning. However, those eyes have lost that magical grace. I remember her obsession for eye makeup. She used to imitate every step mentioned by the beauticians on YouTube. She had a rich collection of eyeliner, mascara, eye shadows and what not.  Her concentration during eye makeup was firm. When I had asked her why she put so much make up on eyes despite being a blessed beauty, she had always replied that the color on her eyes proves her chirpy soul of having me as her partner. Every time when she had cried in my arms after a storm of misunderstandings between us, she had pulled my shirt to bury her face within the hug, and ended up smudging her eye makeup over my shirt chest. She had conceded the smudging as the decay of her soul due to misunderstanding. I had always laughed at her childish theories and underestimated it for being absurd. Now that she had left my life, I realized she was never immature. Each small act of love and care for me was priceless. Her love theories held a deeper meaning that always hued her soul bright. But I was blind. I remained blindfolded by the silky rich aims. Neither could I see deep into her mesmerizing eyes, nor could I shelter inside her majestic heart. It was already very late. Her soul has already decayed along with the colors of her eyes. All that was left behind was a feeble streak of fate.

The waiter appeared to serve her order. This time she thanked him with raised eyes and a forced smile. She added some sugar to the coffee, stirred it and then cupped her palms around the coffee cup to soak in some warmth. I spotted a diamond ring in her left ring finger. A spark of reality exploded inside my core. To re-confirm, I looked at her hair parting on the forehead.  There was a small vermilion mark. She was married.

Suddenly the Hollywood music at the background became loud. I realized the café was crowded enough. The drizzles of rain had stopped and the sky was clear. I could see her reflection on the glass wall to my right. A long life has passed. I failed to catch hold of the most beautiful gift ever. The eminence of huge money earned is limited only to the conspicuous objects. I have already lost the angelic affection of the most beautiful girl I could ever imagine. A vacant chair opposite to me proved the destitution of my soul. Neither have I owned an engagement ring, nor a friend to lend an ear to listen to my mental adversity.  The greed to eat money has left me diseased. What do I have? I blinked. Tears occupied my vision to lubricate my eyes guilty of every moment ridiculed for disparaging the people who selflessly loved me.

taste like sober...         but it really did, taste ****** good drunk.

and why would i on earth write something like this?
   a memory of a flatmate at edinburgh university,

     spaghetti and "garnished" it with salt... and that was it...

well, if you look up a recipe from a page like bawarchi, it has to be good.

aside making the chapatis,
the turmeric infused rice,
and the kashmiri chilly curry
(oh **** me, bring
the cuisine, curries are great
contenders of the goulash...
ha ha... goulash in a gulag:
possibly a great title for
a book... that will never be
written)...
there was this little curiosity
to add on today's menu...
i realised that:
   i've never used mint in a curry
recipe...
luckily i have a lovely beu of
a mint "shrub" in the garden:
why?
   well, the people i'm living
with love their mojitos...
so there is was, staring back
at me: mint chicken curry...
i've never used so little spices
in all the curries i've made...
plus, i do like my peshwari naans...
all it took was mint (which you
rarely see)... fresh coriander...
a quarter inch of cinnamon,
    three legs of a star anise
  a bay leaf, and some chilli powder...
evidently blitzed into a paste
with some water...
   but **** me... turmeric?
(i had to add it in the end) -
cardamon pods? cloves?
        the rest of the jazz band?
but you know what...
         it didn't matter,
         it came out in the end,
pretty as a *paul gaugin

weird radioactive green at first,
then, over a period, a nice pale
vindaloo brown... who would have
thought: mint, cinnamon, coriander...
i guess the anise too...
but that's beside the point,
as the title suggests...
this really is: a culinary conundrum
for me...
    you know how when you
cook an italian dish,
  you can still pick up the texture of
diced onions?
   well... when making a curry...
the onions? "magically" disappear...
every, single, curry, i've made
has the ability to: literally dissolve
the onions, so the diced onion tecture
apparent in italian dishes: vanishes!
into thin air! well, more like vanishes
into: a rich sauce.

p.s. i can't believe i sat for two hours
worth of film,
   watching clive owen be this model
father, carpenter and even a car mechanic,
looking for this missing tool-box,
