Summer diet: Weight loss summer food

The weather may change but our diet remains constant. Whatever the weather, summer, winter or the monsoon we want our pav bhaji or Schezwan chicken or the spicy kebabs and the masala chai.

But realization never strikes us that change in weather could mean a change in diet as well. For those on a weight loss diet the options are slim, you need food that is delicious, low in calories, rich in vitamins and minerals as well as fibers. Let's peak into your refrigerator and cook up the best summer weight loss meals.

Max on vegetables: Vegetables are the best bet when the sun is unforgiving. Red meat is not advisable for summer as it increases your body's internal energy requirement for digestion - thus, tiring you out if you aren't in great health to begin with. Luckily Indian food is known for delicious vegetarian food, which means that you won't need to make too much of a compromise when shifting to a palette that mostly involves leafy vegetables.

Go easy on the nuts: Dried nuts are rich in calories and to avoid over indulging yourself with nuts have them in small proportion and stock away the rest. Another reason to avoid nuts in summer is that they produce heat in your body, which could result in heat boils. Go easy when snacking on these energy nibbles.

Learn about salads: They are no longer just sliced cucumbers, tomatoes and beetroot. Salads have evolved; restaurants have a wide selection of different salads. Indians are more open to feasting on salads as a meal. It takes less time to prepare and you can toss in anything you want even chicken and fish along with the greens. Add citrus fruits, chilled cucumber and fresh lettuce and you've got the perfect summer meal.

Try the chilled soups: Gazpacho is the first dish that comes to mind when you hear the words - chilled soups. But you can try out soups made of tomatoes, green peas and cucumbers; they are both cooling and refreshing. If you like beetroot, you should try chilled beetroot soup too. Healthy and refreshing, these chilled soups are the perfect starters on a hot and balmy summer night.

Enjoy fruits as desserts: Fruits cool the body, rejuvenate your cells, keep you hydrated, and taste like heaven on a hot summer day. Dice some fruits in a bowl, sprinkle some chat or cinnamon powder and you have an awesome dessert. Watermelon is the most sought after fruit when the sun is relentless.

Meet your summer crush - low fat yogurt: Dairy products are always a healthy option, provided they are low fat. Good for digestion and rich in calcium, you can have yogurt any way you like - whipped into lassi, sweeten with sugar or mixed with fruits. Whether in Montreal, where she was born and raised, or in Delhi, where her award-winning brasserie sits, the stylish chef’s love for gastronomy has always run deep. She came to India to chase her passion about eight years ago, after leaving behind an engineering career and having trained at the esteemed ITHQ (Institut de tourisme et d’hôtellerie du Québec). In 2014, she introduced unusual combinations like oysters with charred onion petals, tamarind puree, and rose vinegar when she became the first Indian chef to be invited to host a solo dinner at the James Beard House in New York City. Also presented there was her very own coffee-table book called Eating Stories, packed with charming visuals, tales and recipes.

A third-generation entrepreneur from a highly distinguished culinary family, she runs a thriving studio in Khar where state-of-the-art cooking stations and dining tables allow her to conduct a variety of workshops and sessions. Her grandfather is remembered as the man who migrated from Africa to London to found the brand that brought curry to the people of the UK — Patak’s. She took over as brand ambassador, having trained at Leiths School of Food and Wine and taught at one of Jamie Oliver’s schools in London. What’s more, Pathak is also the author of Secrets From My Indian Family Kitchen, a cookbook comprising 120 Indian recipes, published last year in the UK.

Most successful experiment

“When I was writing recipes for my cookbook, I had to test some more than once to ensure they were perfect and foolproof. One of my favourites was my slow-cooked tamarind-glazed pork. I must have trialled this recipe at least six times before publishing it, and after many tweaks I have got it to be truly sensational. It’s perfectly balanced with sweet and sour both.”

Future fantasy

“As strange as it sounds, I’d love to cater my own wedding. You want all your favourite recipes and you want to share this with your guests. I could hire a caterer to create my ideal menu, but I’d much prefer to finalise and finish all the dishes myself so that I’m supremely happy with the flavours I’m serving to my loved ones.”

Fresh elegance

“I’m in love with microgreens for entertaining and events…although not a new trend, they still carry the delicate wow factor and are wonderfully subtle when used well. I’m not into using foams and gels and much prefer to use ingredients that are fuss-free.”

This advertising professional first tested her one-of-a-kind amalgams at The Lil Flea, a popular local market in BKC, Mumbai. Her Indian fusion hot dogs, named Amar (vegetarian), Akbar (chicken) and Anthony (pork), sold out quickly and were a hit. Today, these ‘desi dogs’ are the signature at the affable home-chef-turned-businesswoman’s cafe-***-diner in Bandra, alongside juicy burgers, a fantastic indigenous crème brûlée, and an exciting range of drinks and Sikkim-sourced teas.

Loving the journey

“The best part of the job is the people I meet; the joy I get to see on their faces as they take the first bite. The fact that this is across all ages and social or cultural backgrounds makes it even better. Also, I can indulge a whim — whether it is about the menu or what I can do for a guest — without having to ask anyone. On the flip side, I have no one to blame but myself if the decision goes wrong. And, of course, I can’t apply for leave!”

What’s ‘happening’

“This is a very exciting time in food and entertaining — the traditional and ultra-modern are moving forward together. Farm-to-fork is very big; food is also more cross-cultural, and there is a huge effort to make your guest feel special. Plus, ‘Instagram friendly’ has become key…if it’s not on Instagram, it never happened! But essentially, a party works when everyone is comfortable and happy.”

This Le Cordon Bleu graduate really knows her way around aromas that warm the heart. On returning to Mumbai from London, she began to experiment with making small-batch ice creams for family and friends. Now she churns out those ‘cheeky’ creations from a tiny kitchen in Bandra, where customers must ring a bell to get a taste of dark chocolate with Italian truffle oil, salted caramel, milk chocolate and bacon and her signature (a must-try) — blue cheese and honey.

The extra mile

“I’ll never forget the time I created three massive croquembouche towers (choux buns filled with assorted flavours of pastry cream, held together with caramel) for a wedding, and had to deliver them to Thane!”

Menu vision

“For a wedding, I would want to serve something light and fresh to start with, like seared scallops with fresh oysters and uni (sea urchin). For mains, I would serve something hearty and warm — roast duck and foie gras in a red wine jus. Dessert would be individual mini croquembouche!”

Having been raised by big-time foodie parents, the strongest motivation for their decision to take to this path came from their mother, who had two much-loved restaurants of her own while the sisters were growing up — Vandana in Mahim and Bandra Fest on Carter Road. Following the success of the first MeSoHappi in Khar, Mumbai, the duo known for wholesome cooking opened another outlet of the quirky gastro-bar adjoining The Captain’s Table — one of the city’s favourite seafood haunts — in Bandra Kurla Complex.

On wedding catering

PA: “The most memorable for me will always be Aarathi’s high-tea bridal shower. I planned a floral-themed sundowner at our home in Cumballa Hill; curtains of jasmine, rose-and-wisteria lanterns and marigold scallops engulfed the space. i think, you should stop going to italy, for one, oh **** me, keep going on hedonist ****-**** fests to places like mallorca, but stop going to italy, you're making my stomach ache from laughter, with what you come back with, the so-called "innovations"; somehow i'd just poach my cauliflower, and drizzle it with fried breadcrumbs, and serve it as a side-dish to fried eggs (2), and some tatties; for goodness sake, even cauliflower cream soup makes more sense, garnished with some fried chorizo!

          who the **** puts avocado on bread?
i can imagine putting it in pasta...
but on bread?
                hey, what the **** does

             i don't know, and i won't google it...

one of my housemates at university told
me an anecdote:
    i was in a restaurant once,
          and asked for a pizza with no cheese...
he continued:
      and then the head chef came out and
asked me... are you, insane?!
       a bit like: bread...    but no butter?
and i thought i was insane eating a watermelon
today, whole,
the red pulp, and the outer layers including
the skin included, allowing myself
a gorilla imitation cameo gimmick...
      but i thought i was mad...
but there's avocado on toast...
   and now... cauliflower on pizza...
                              it's a ******* side-dish!
wait, don't tell me... you're going to put
some potatoes onto the pizza the next frizz
comes along... right?
                      how about beetroot?
                         thankfully, if i have some
wacky ideas in terms of culinary escapades,
they happen, drunk, after 12a.m.,
and i'm the scientist, and the experimental rabbit
2-in-1...
                     a newspaper column?
apparently, you get one, putting avocado
on toast...
                 or cauliflower on a pi-zzzzz-ah...
to be honest, even though i haven't tried it,
grilled aubergines on a pizza could work...
   the toast?               marmite and cheddar...
english people should stop glorifying holidays
in italy... they're ****** cooks...
                   an italian would just look at
a pizza with cauliflower and say:          cosa?
i'd suggest heading to scotland first,
and picking up the vibes from some haggis.

somewhere along the lines, a pre-script revelation by dumb'oh: because painting deals with nudes in all seriousness and soberness, music explains the coupling of violins etc. to an ******... writing, in its depth has to deal with the murk and muck of thoughts and emotions - poetry as such entices an anarchistic spontaneity against any categorisation and systematisation, who's chief proponents are the pillars of reason, psychology and philosophy systematise, tell you the plans of the house, tell you what the limits and excess are... poetry in its anarchism teaches you nothing but experience and how to exploit it - as nietzsche pointed out: a shamelessness towards experience.*

i could, i mean, technically make
poetry cut-clean and smartly dressed,
sigh O sighing and star gazing,
i could masquerade what i'm about
write, but then i sometimes do like
cleaving meat off a bone using a blunt
knife, for that lion's tooth feeling
of having to use the molars (yes,
the canines are all kosher, they stab you
and the lion waits for you to slowly
bleed out - no sadism on his part,
no industrial death syndicate with
iron maidens, racks, a blunt sword
that hacked a few times at ******
mary's head on the scaffold - they executed
the ones they loved with a sharp sword,
mary's head was chopped off using
something as sharp as a toothpick, terrible
scene) - where was i? ah yes, blunt things,
blunt knife cleaving off meat from the bone
(a hellish follow-up if you're dicing the
meat for a curry) -
so this lion is the kosher butcher, he doesn't
do insect digestion, no spider-web cocooning
(is that an anaesthetic aphrodisiac you're
injecting so you eat me while i sleep? grand) -
so he bleed the **** thing out,
he's not some inverse necrophiliac in want
of wanting to see the thing he's about to eat
watching itself get eaten - another time,
another place;
unlike painting and composing music, writing
doesn't really have ****** perks when it
comes to it - oddly enough writing is a
pseudo-celibacy - now this is where the bluntness
comes in - i mean bach ****** and fathered
about a dozen children, mozart too, picasso for sure,
but writing is hardly a form that allows
the healthiest *** lives of what painters enjoy,
there's no aeroplane or lightning-thunder mechanics,
you know when you see a plane and "think"
you see it 20 miles behind, when it fact it's the
gurgling lazy tentacle flapping about from the
engines lagging behind - first lightning, then
the thunder - well, writing is the thunder and
the 20 mile lag of the aeroplane - i don't know
why music fits in with painting in terms of
being classified in the former, but it does,
it's a passive excursion into the art - you don't
need to play an instrument these days,
the ****'s just there for you to be bothered enough
to listen to it - i know, i know, audio-books,
never listened to one - but such passive appreciation
i'd only recommend to the blind, unless proficient
in braille, more than two volumes of the work done...
so bluntness... well writing is comfortable with
that other form of ****** gratification, your own,
like today: i was on Onan's throne (a toilet),
wiped my *** after taking a **** and thought
about not utilising my imagination, rather,
using what i call the perfected debasement of
*******: gifs - i can't glorify *******,
but i need something to act like a plug-hole
for the imagination to be pristine - and .gifs
are the perfect way to use it (after all, it is there
for something): no fetish, no ***** leather,
gimps out the question, ****** mind you too,
no teen, not fatty boom boom, no she-male -
whatever, you know it's out there -
but then my neighbour started singing in the
bath... the walls are thin... yes... thin enough
to hear what's going on next door...
now that put me off altogether... couldn't do it...
not that it annoyed me, not even in the slightest,
i can't do those kind of robotics with my
neighbour's "soprano" washing herself in the bath...
just, couldn't, do, it - sulky mood? not really -
but the moral of the story:
               the debasement of *******
               given that feminism
               proposes that ******* is debasing...
hey, i'm not the rich ******* with a mansion

as frank o’hara would have it, i did this, i did that...
or as i would have it, i didn’t do this, and i’m sure
i didn’t do that,
but the beetroot red on the freshly ploughed fields
of brown were my reminder
as i sat on a pile of stones i stacked in the field
admiring the skyline...
how did this freshly ploughed field of brown
turn to beetroot red with the sunset?
never mind...
i got my wish...
petted a stranger’s rottweiler on my way home waltzing
a beer-can to an invisible maestro’s approval.

.the fireworks are still going off, Guy Fawkes 2.0, and sitting there thinking... big bang... so there was a sound in vacuum? i see a firework go off, the bright explosive light, and then the thunderous balloon burst! boom! i tap my finger... i'm guessing a 1.2 second delay from seeing the light from the firework, and hearing the BOOM! so... in light of all this... are we 1.2 seconds ahead of the big bang, or 1.2 seconds behind it, actually having happened, as in: still happening... i mean... it's not like sound precursors light... and we are not exactly illuminating creatures for most part, but sure as ****, we're loud.

well...
   i might have been looking for
a needle in a haystack,
or whatever it was i was looking
for,
  but i have spoken to a few homeless
people...
i remember about four congregated
around me in Trafalgar Sq.
one sunny afternoon,
    and that was the point where i knew
i was losing it, detaching myself
from the conventionality of "reality":
having meaningless conversations
with people wearing NPC-masks...
the voice inside my head started
thin out... until it fizzled out and i turned
into a writing machine...
if i had the same internal-monologue
with myself, i wouldn't be writing this,
a gaping abyss agitated by whatever
interacts with it,
and subsequently prompts such writing...
i put my hand around one of
the homeless men,
he didn't like it, i comforted him,
we'll just talk...
   then he started explaining to me about
his spot in the Sq.,
  he stood up, and indexed the spot,
the spot where i sat next to him,
another came and sat akimbo
like a child, listening to me intently,
two teenage girls passed
and he asked them:
      what do you see in his (my) eyes?
they replied nothing...
still somehow mesmerized like a child
in a primary school, listening intently...
red as a beetroot from all the *****...
i ended up giving him a book
i just bought in an indie bookshop...

i stood up and abstracted a square,
drew both my index fingers
   around a slab of pavement
asking the stupid question:
                     do you think it's there?
or inside your mind?
                  then the homeless man
sitting in akimbo introduced me
to a northern irish veteran with PTSD...
drunk like a skunk...
         and then we walked into
the homeless shelter together,
   they didn't let me in,
because i didn't remember my national
insurance number, or had the card
for that matter...
          weeks pass...
   imagine the chances of this happening,
in central London...
i bump into the same man who sat in
akimbo in Trafalgar Sq. on the streets
of Soho... the chances... or meeting someone,
randomly, a second time, in London?
******* slim... slimmer than size 0
catwalk models... more like size -1...
and he told me that a spider crawled
      into his ear...
    he said that he was going deaf...
                   so i walked into a shop
bought a few beers and we sat in
a church courtyard talking with his friend
who showed off his buddha tattoo
and said: i'm going to walk to India...
subsequently we were ushered out...
because we were breaking the law...
and i thought: but you serve wine in
the church, don't you?
    there was no argument...
then there was the instance in Leytonstone
with the homeless talking about
pneumonia of some woman they
were friends with...
               many pleasantries hugging
what not...
   but...
          the most profound instance i had
was just outside Romford train station...
the same man i would later sit down with
and offer a cigarette to in Seven Kings,
just outside the O'Grady's Irish pub...
       i've seen how people interact with
homeless people... that snarky attitude...
they stand and bend over while talking
to someone sitting on the pavement on cardboard...
a toned down version of paddy bateman...
this ridiculing with intimidation...
ugliest crap imaginable...
   so i sat with this man...
     gave him my spare fiver...
       rolled up a joint...
   we went around the corner to smoke it...
some kid with a football ran up to us,
we passed... and then we asked each other questions...
the kid said he wanted to become a footballer,
me and the homeless man encouraged
him to take his dream seriously...
quickly the marijuana high smirk
left his face...
    apparently i had a diamond on my forehead,
claimed the homeless man...
but then i asked the very touchy question...
so... what made you homeless...
  i'll never forget what he retorted with...
my mother told me to never tell a lie.
what?!
  so the only reason he was homeless was
because he was an honest man, prior?
   oh... so this is what makes men homeless...
honesty, for one,
   and along with honesty,
   other traits that elevate valor,
    alongside the many other virtues...
well... "who would have thought"?
               like that wasn't painfully obvious
to begin with... namely...
how the rats, the skivvy, the immoral,
the sadomasochistic overlords of
institutions become rewarded exponentially...
while the man who replies
to the homeless question with:
    my mother told me to never tell a lie.
