Whether in Montreal, where she was born and raised, or in Delhi, where her award-winning brasserie sits, the stylish chef’s love for gastronomy has always run deep. She came to India to chase her passion about eight years ago, after leaving behind an engineering career and having trained at the esteemed ITHQ (Institut de tourisme et d’hôtellerie du Québec). In 2014, she introduced unusual combinations like oysters with charred onion petals, tamarind puree, and rose vinegar when she became the first Indian chef to be invited to host a solo dinner at the James Beard House in New York City. Also presented there was her very own coffee-table book called Eating Stories, packed with charming visuals, tales and recipes.

“Most people make the mistake of over-complicating the menu; having too much diversity and quantity. Wastefulness isn’t a good way to start a life together.”

A third-generation entrepreneur from a highly distinguished culinary family, she runs a thriving studio in Khar where state-of-the-art cooking stations and dining tables allow her to conduct a variety of workshops and sessions. Her grandfather is remembered as the man who migrated from Africa to London to found the brand that brought curry to the people of the UK — Patak’s. She took over as brand ambassador, having trained at Leiths School of Food and Wine and taught at one of Jamie Oliver’s schools in London. What’s more, Pathak is also the author of Secrets From My Indian Family Kitchen, a cookbook comprising 120 Indian recipes, published last year in the UK.

Most successful experiment

“When I was writing recipes for my cookbook, I had to test some more than once to ensure they were perfect and foolproof. One of my favourites was my slow-cooked tamarind-glazed pork. I must have trialled this recipe at least six times before publishing it, and after many tweaks I have got it to be truly sensational. It’s perfectly balanced with sweet and sour both.”

Future fantasy

“As strange as it sounds, I’d love to cater my own wedding. You want all your favourite recipes and you want to share this with your guests. I could hire a caterer to create my ideal menu, but I’d much prefer to finalise and finish all the dishes myself so that I’m supremely happy with the flavours I’m serving to my loved ones.”

Fresh elegance

“I’m in love with microgreens for entertaining and events…although not a new trend, they still carry the delicate wow factor and are wonderfully subtle when used well. I’m not into using foams and gels and much prefer to use ingredients that are fuss-free.”

This advertising professional first tested her one-of-a-kind amalgams at The Lil Flea, a popular local market in BKC, Mumbai. Her Indian fusion hot dogs, named Amar (vegetarian), Akbar (chicken) and Anthony (pork), sold out quickly and were a hit. Today, these ‘desi dogs’ are the signature at the affable home-chef-turned-businesswoman’s cafe-***-diner in Bandra, alongside juicy burgers, a fantastic indigenous crème brûlée, and an exciting range of drinks and Sikkim-sourced teas.

Loving the journey

“The best part of the job is the people I meet; the joy I get to see on their faces as they take the first bite. The fact that this is across all ages and social or cultural backgrounds makes it even better. Also, I can indulge a whim — whether it is about the menu or what I can do for a guest — without having to ask anyone. On the flip side, I have no one to blame but myself if the decision goes wrong. And, of course, I can’t apply for leave!”

“A well-made Bengali khichri or a good light meat curry with super-soft chapattis.”

What’s ‘happening’

“This is a very exciting time in food and entertaining — the traditional and ultra-modern are moving forward together. Farm-to-fork is very big; food is also more cross-cultural, and there is a huge effort to make your guest feel special. Plus, ‘Instagram friendly’ has become key…if it’s not on Instagram, it never happened! But essentially, a party works when everyone is comfortable and happy.”

A word to brides

“Let others plan your menu. You relax and look gorgeous!”

This Le Cordon Bleu graduate really knows her way around aromas that warm the heart. On returning to Mumbai from London, she began to experiment with making small-batch ice creams for family and friends. Now she churns out those ‘cheeky’ creations from a tiny kitchen in Bandra, where customers must ring a bell to get a taste of dark chocolate with Italian truffle oil, salted caramel, milk chocolate and bacon and her signature (a must-try) — blue cheese and honey.

The extra mile

“I’ll never forget the time I created three massive croquembouche towers (choux buns filled with assorted flavours of pastry cream, held together with caramel) for a wedding, and had to deliver them to Thane!”

Menu vision

“For a wedding, I would want to serve something light and fresh to start with, like seared scallops with fresh oysters and uni (sea urchin). For mains, I would serve something hearty and warm — roast duck and foie gras in a red wine jus. Dessert would be individual mini croquembouche!”

Having been raised by big-time foodie parents, the strongest motivation for their decision to take to this path came from their mother, who had two much-loved restaurants of her own while the sisters were growing up — Vandana in Mahim and Bandra Fest on Carter Road. Following the success of the first MeSoHappi in Khar, Mumbai, the duo known for wholesome cooking opened another outlet of the quirky gastro-bar adjoining The Captain’s Table — one of the city’s favourite seafood haunts — in Bandra Kurla Complex.

PA: “The most memorable for me will always be Aarathi’s high-tea bridal shower. I planned a floral-themed sundowner at our home in Cumballa Hill; curtains of jasmine, rose-and-wisteria lanterns and marigold scallops engulfed the space. How memories, even of happy times, can feel smothering when recalled from within the Bell Jar.
Old Deuteronomy’s lived a long time;
He’s a Cat who has lived many lives in succession.
He was famous in proverb and famous in rhyme
A long while before Queen Victoria’s accession.
Old Deuteronomy’s buried nine wives
And more—I am tempted to say, ninety-nine;
And his numerous progeny prospers and thrives
And the village is proud of him in his decline.
At the sight of that placid and bland physiognomy,
When he sits in the sun on the vicarage wall,
The Oldest Inhabitant croaks: “Well, of all …
Things… Can it be … really! … No!… Yes!…

My mind may be wandering, but I confess
I believe it is Old Deuteronomy!”

Old Deuteronomy sits in the street,
He sits in the High Street on market day;
The bullocks may bellow, the sheep they may bleat,
But the dogs and the herdsmen will turn them away.
The cars and the lorries run over the kerb,
And the villagers put up a notice: ROAD CLOSED—
So that nothing untoward may chance to distrub
Deuteronomy’s rest when he feels so disposed
Or when he’s engaged in domestic economy:

My sight’s unreliable, but I can guess
That the cause of the trouble is Old Deuteronomy!”

Old Deuteronomy lies on the floor
Of the Fox and French Horn for his afternoon sleep;
And when the men say: “There’s just time for one more,”
Then the landlady from her back parlour will peep
And say: “New then, out you go, by the back door,
For Old Deuteronomy mustn’t be woken—

I’ll have the police if there’s any uproar”—
And out they all shuffle, without a word spoken.
The digestive repose of that feline’s gastronomy
Must never be broken, whatever befall:

The Pekes and the Pollicles, everyone knows,
Are proud and implacable passionate foes;
It is always the same, wherever one goes.
And the Pugs and the Poms, although most people say
That they do not like fighting, yet once in a way,
They will now and again join in to the fray

Until you can hear them all over the Park.

Now on the occasion of which I shall speak
Almost nothing had happened for nearly a week
(And that’s a long time for a Pol or a Peke).
The big Police Dog was away from his beat—
I don’t know the reason, but most people think
He’d slipped into the Wellington Arms for a drink—
And no one at all was about on the street
When a Peke and a Pollicle happened to meet.
They did not advance, or exactly retreat,
But they glared at each other, and scraped their hind
     feet,
And they started to

Until you can hear them all over the Park.

Now the Peke, although people may say what they please,
Is no British Dog, but a Heathen Chinese.
And so all the Pekes, when they heard the uproar,

In their huffery-snuffery Heathen Chinese.
But a terrible din is what Pollicles like,
For your Pollicle Dog is a dour Yorkshire tyke,
And his braw Scottish cousins are snappers and biters,
And every dog-jack of them notable fighters;
And so they stepped out, with their pipers in order,
Playing When the Blue Bonnets Came Over the Border.
Then the Pugs and the Poms held no longer aloof,
But some from the balcony, some from the roof,
Joined in
To the din
With a
Bark bark bark bark
Bark bark BARK BARK
Until you can hear them all over the Park.

Now when these bold heroes together assembled,
That traffic all stopped, and the Underground trembled,
And some of the neighbours were so much afraid
That they started to ring up the Fire Brigade.
When suddenly, up from a small basement flat,
Why who should stalk out but the GREAT RUMPUSCAT.
His eyes were like fireballs fearfully blazing,
He gave a great yawn, and his jaws were amazing;
And when he looked out through the bars of the area,
You never saw anything fiercer or hairier.
And what with the glare of his eyes and his yawning,
The Pekes and the Pollicles quickly took warning.
He looked at the sky and he gave a great leap—
And they every last one of them scattered like sheep.

An architect of tile and stone,
mosaic played beautifully in natural colors of desert hues and corresponding twists of evergreens,
Super-heated heavy iron,
along sparks of arc that weld the mind to something infinite yet sublime,
Pastels,
blurring lines of what is real from what is seen,
on canvas unrealized,
Sculptured earthy clay resembling remembrances of more than simple glimpses set in stone,
Artistry of gastronomy,
purging old ideas and new-found taste to tease the discriminating palates of those inclined,
Poets reading widows tears in pouring rain,
outside well-lighted and closed laundro-mats in frigid airy nights,
Waiting to be heard and yet unrecognized in blue-grey hoodies,
Svelte voices and incantations that long for listening ears,
Writers writing about journeys and destinations,
each mile travelled and another respite upon their road, 'Poets, preists and politicians...their words are their ambitions',
Maybe someday there will arise,
a scientist,
that will surmise,
'All is one and one is all',
Then the bleats will not go unheard.

This once difficult task complete

to store within his/her memory,
which tummy appeared like an amazing

sumptuous (promising scrumptious) feat.
Minutes ticked away
as our stomachs growled louder
patiently awaiting the grateful moment
to dine starting with clam chowder
poetry soup compiled
within me taste testing router.

Next in line from smorgasbord feast
hors d'oeuvres
   ample enough to satiate thine palate
to whet from deep fried delicacies greased
and self restraint practiced
so the main course diminished least.

We fell upon butterfly jumbo shrimp
and marinated mushrooms when brought
an atavistic motion that memory wrought.

The Matzo ball soup with Jewish rye bread
went to the gullet with a dollop of butter thinly spread.
A vegetable, venerable, veritable, and spinach pie

from a glass enclosed wheel
tickling that reserved “off limits” hot pocket

hashtagged for just such a sugary treat
thus summoning forth
within an engorged abdomen,
   nonetheless, an audible zeal.

That reserved allotted sweet
baked, fried, or whipped parfait
or countless other grandiose
mouth watering delicacy.

Ah...juiced enough wiggle room
for one decadent byte, perchance small
enough to roll around in the mouth,
like a Chocolat Mousse, or a honey ball.

Despite that ready to explode
simply eyeing a food tray
no longer in an ala mode vis a vis
clamoring for consumption

my my, ain't it June?! Juno, why have you given these poor people snowballs?! it's June and my central heating is on, it's close to 10 degrees Celsius, Bavaria is flooded, people embraced Einstein's relativity of the collapse of the = sign using a parabola, forgetting the basic Newtonian: cause & effect - the moment i coupled Socratic abhorrence of moral relativism, i took to dislike relativism kindred of: claustrophobia and agoraphobia... at some point Einstein's relativity equates space as time, rather than what Newton would suggest trans linear: algebraic squared, Newton still resides in cause & effect, space = ~space, given: 1 = millimetre, kilometre, and any other division... likewise with time... 20th century fashion being the perfect crop of quantum plagiarism, although in the 21st century the dance loop jumping between decades, back in the 20th century a linear expression, an evolution; quantum physics doesn't deal with linear excavations necessarily repeated, it's just repeats what is unnecessary. global warming and the mini ice age, June's here, Einstein too, Newton too, relatively speaking we're aether imprints... speaking via causality we're leaving a carbon footprint - well, **** me, two plus two... it's still scientific negativism, dietary requirements of modern man overshadowed all the scientific progresses in the field... never mind the cure for cancer! never mind that! as long as we can dress a diabetic in Lycra for bariatric surgery - never had i had i heard of such gastronomy, should it have been a pork chop smoked using zyklon B.*

we are living in the age of scientific negativism,

The day is far from complete

           if with fine food I don't meet

           all the poetry of life would not compensate

           it's gastronomy that I most celebrate!
Yours truly would never be confused for a gourmand, nevertheless I could enjoy experiencing taste testing select food samples if offered an opportunity of attending a fancy feast viz smörgåsbord, whereby oral indulgence would arouse, excite, inflict outstanding pleasure upon every taste bud on mine tongue.

Asia generic gastronomy guy, I know how one can wolf down gourmet foods witnessing expanding girth; a destructive transformation clearly beyond any excessive enthusiasm. The necessity to feed and clothe this corporeal essence christened Cookie Muenster revels more so within the medium of writing.

Aspirations toward fame nor fortune less significant than the mere pleasure to concoct a visually savory appetizing epistle. Food for thought more than to fill the void, where growling heard across the world wide web, thus, no anterior, interior or ulterior motive asper begging for money underlies this exercise. yet...if perchance a voluntary choice arises to dole out a smidgen of legal tender a name and address indeed willingly linkedin to this faux popinjay person, who tries to convey decency, humility, levity...qualities that wield zest.

Now decision time to select one delicacy equally
as appealing as the next on expansive menu list,
the resultant penultimate
decision method resorted to twist
then flick (with eyes closed) the wrist.

This once difficult task complete
twas now the responsibility of the maitre'd
to store within his/her memory,
which tummy appeared like an amazing
sumptuous (promising scrumptious) feat
Minutes ticked away
as our stomachs growled louder
patiently awaiting the grateful moment
to dine starting with clam chowder
